PEA & POTATO MASALA
Potato Masala is a popular dish from Southern India.
If I had to describe Southern India in a dish this would be it. It’s so popular that the rest of the country enjoys it as well and always forms part of celebration dinners. In fact it was at a Birthday Celebration near Amritsar in the Punjab that I came across this version with the addition of Peas and served with Paratha’s.The base of the dish is made exactly the same just with peas being added towards the end. It’s made using Brown Mustard Seeds, curry leaf, onions, green finger chilli’s, turmeric, potato and peas. It knocks spots off a Bombay Potato. The heat level is Medium-Hot

KERALAN CHICKEN
There are many different versions of this Recipe and the one used here I came across in the Idukki District of Kerala.
It’s up in the hills inland and a very fertile lush growing area. Whilst staying with one of the local farmers and his family their cook prepared this meal for me.

The easiest way to describe it would be to say it’s slightly similar to a kurma in that Coconut and Almonds are used in a Rich Sauce and it’s a little sweeter than other curries but this Recipe uses no cream and has a lot more flavour. It uses all the sweet Spices like Cinnamon , Green Cardamom , Star Anise , Pomegranate Seeds and of course The Curry Leaf and as a balanced souring agent Green Unripen Mango.
Fresh Green Finger Chilli’s are used but not many and as with our other curries the Chicken Tikka has been marinated for 24hrs

This heat level with regard to chilli is Mild.

CHICKEN TIKKA JALFREZI
A well known dish that is thought to have originated in the Bay of Bengal by the British Empire.
There are records of Home Cook Books dating from around 1850 describing this dish. Originally it started out with the cold meats being fried with lots of Onions and Fresh Green Chilli’s. It later evolved to something similar to a Stir-fry which is pretty much how it is today using onions , whole green finger chilli’s , carrots , capsicum peppers , tomatoes and a rich spice mix.

We use our Chicken Tikka that’s been Marinated for 24hrs. The heat level with regard to chilli is Medium-Hot however you can easily pick out the Chilli’s if it start getting to hot!!

CHICKEN TIKKA MASALA VEGETARIAN OPTION PANEER
This dish along with Murgh Makhani are Indias two biggest exports and the World’s Most Popular Curries.
There has been an age-old argument going on about the origin of the Chicken Tikka Masala with some saying it was invented by the British in the curry houses of Birmingham , other saying it was created in the curry houses of Glasgow however my friends both are wrong as it was in fact created in the Top Hotels of Delhi (North India). Many years ago, the kitchen staff created this dish for themselves from ingredient’s that would otherwise have to be thrown away due to a lack of proper refrigeration and cheap cuts of meat that were considered improper to serve to the wealthy cliental like chicken wings.
Blocks of ice were brought to the Hotels every morning but in the Extreme heat of the North these soon melted giving the dairy products a very short shelf live. Tomatoes would very quickly over ripen and everyday boxes of them would have to be thrown away so the Chefs devised a dish using these tomatoes with the chicken wings and dairy products.
The biggest joke of the day was that the VERY BEST curry these Hotels ever made never found their way onto the plates of the guests but was eaten by the staff lol !! and this my friends is the true story of the World-Famous Chicken Tikka Masala.

MURG MAKHANI (Butter Chicken) VEGETARIAN OPTION PANEER
When made properly to the Authentic Traditional recipe and not coming from that one magical pot that makes all curries!! this is truly a dish to behold.
We make ours to an age-old family recipe originating in what is now the Indian Punjab. The base sauce for the curry is cooked in a pressure cooker to make sure we extract and retain all of the goodness, flavour and benefits of the fresh ingredients, whole spices and cashew nuts before adding copious amounts of butter and cream.

CHICKEN TIKKA PASANDA VEGETARIAN OPTION PANEER
This is one of the most ancient dishes with records dating back as far as the 12th Century in the time of The Mughal Emperors.
The word Pasanda is derived from the Urdu word “Pasande” meaning Favourite and when you taste this dish it’s easy to understand why. Over the many years tastes have changed and different food fashions have been and gone however this dish has always used the finest cuts of meat in a very rich and opulent sauce. Our family recipe uses cashew nuts, coconut, almonds and dried fruit in a thick base gravy with fresh cream and our special masala seasoning and finished with red wine. This is a very rich and satisfying dish and we hope you enjoy it as much as the Mughal Emperors did all those years ago.

THE HOUSE SPECIAL NAGA CHICKEN
The name of this dish along with our Business name relates to the Naga Morich Chilli Pepper which i found in Nagarland.
Until recently this was the Hottest Chilli Pepper in the World with a Scoville Chilli rating of between 800,000 and 1.2 Million. Varieties can be found in different countries and it has a few different names, Bhut Jolokia or simply “Ghost Pepper”. This Chilli comes with a Government health warning and should not be attempted to be eaten by people that aren’t used to “SERIOUSLY HOT” food.

This dish is made with our Chicken Tikka marinated in special spices for 24hrs then cooked using just one Naga Morich in a blended onion and tomato paste with our own unique spice blend. black cardamom , black cumin, cinnamon and bay leaf to name a few.

The heat level is “EXTREME” be warned!!
